-26 garlic cloves (unpeeled)
-2 tablespoons olive oil
-2 tablespoons butte(preferably unsalted)
-1/2 teaspoon cayenne pepper/red chilli powder
-1/2 cup fresh ginger
-3 cups sliced onions
-1 1/2 teaspoons chopped fresh thyme
-26 garlic cloves, peeled
-1/2 cup coconut milk
-3 1/2 cups vegetable broth
-4 lemon wedges
Preheat oven to 350F. Put 26 garlic cloves in glass baking dish. Add 2 tablespoons olive oil and salt.Cover baking dish with foil and bake for 45 minutes until garlic is golden brown and tender.Cool and squeeze garlic between fingertips to release cloves. Transfer the cloves to bowl.Melt butter in large saucepan.Now add onions, thyme, ginger and cayenne powder and cook about 6 minutes until onions turn translucent..Add roasted garlic and 26 raw garlic cloves and cook for another 3 minutes. Add vegetable broth and simmer until garlic is very tender.Keep it covered for about 20 minutes. Working in batches, Puree soup in blender until smooth. Return soup to saucepaN and add coconut milk and bring to simmer. Season with salt and pepper.
Squeeze juice of a wedge of lemon in each bowl and serve.
The soup can be prepared and refrigerated. Rewarm over medium heat, stirring occasionally.
